I wanted to try my hand at a couple of recipes from my birth place, Nicaragua. Here goes my first attempt at making Arroz con Leche or Rice Pudding Nicaraguan Style. I will be posting another variation in a few weeks. Let me know if you decide to try your hand at this.
Ingredients:
3 cups of water
1 cup of rice
3 cups of milk
3/4 – 1 cup of sugar
1 to 2 sticks of cinnamon
powered cinnamon
Directions:
Place 3 cups of water, 1 cup of rice and cinnamon sticks into a deep sauce pan. Simmer on medium heat until water boils then lower heat to medium low until rice is almost done, tender inside, stir every few minutes. On a smaller sauce pan warm 3 cups of milk on low heat, stir often, about 15 minutes. Add warm milk to the rice mixture and add sugar stir often until desired consistency, it takes around 30 to 45 to be ready on medium heat. Remove the cinnamon stick and serve.
