This Instant Pot Caramel Flan Recipe is made with condensed & regular milk and baked in the Instant Pot.
If you been reading this blog for a while now, you know that I love Flan and why not. Flan desserts are so delicious, extremely satisfying and beyond versatile. Yes, you read that correctly. All you have to do is add or substitute a few ingredients one way or another and you have a completely new dessert every time. But be honest, the one thing I don’t like about making flan is hauling the heavy baking dish and placing it in my oven. You see, when making flan, you have to bake your custard in a bain-Marie. Well, since I am loving my new Instant Pot so much, I decided to make one of my favorite variations of this delicious dessert and today I want to share my Instant Pot Caramel Flan recipe and step-by-step video below.
Instant Pot Caramel Flan Recipe
Instant Pot Caramel Flan
Ingredients
- 3/4 cup sugar
- 4 Large eggs
- 1 cup of milk
- 1 14 oz. can of Sweetened condensed milk
- 1 teaspoon vanilla extract
- a pin of salt
- 1 1/2 cups of water for your Instant Pot
Instructions
- In a saucepan, over medium to high heat cook and stir sugar until melted and caramel-colored, around 10 to 15 minutes.
- Carefully, pour sugar into a round oven-safe dish, tilting to coat bottom and around the walls of the container. Set container aside.
- In a medium bowl, beat eggs, milk, sweetened condensed milk, vanilla, and salt. Pour mixture into prepared caramel baking dish and then cover the baking dish with aluminum foil.
- Pour water into the inner pot of your Instant Pot. Place the flan custard baking dish on the Instant Pot's steam rack and carefully place them inside the inner pot.
- Now, put the lid on and turn the Steam Release to sealing.
- Then, press the "MANUAL" button and +/- to 5 minutes.
- Once the Instant Pot is done, let it "Natural Release" for 10 minutes, then vent the rest of the steam completely before opening the lid.
- Carefully remove flan custard baking dish from your Instant Pot. The flan is done when you insert a knife or a toothpick in the center of your flan and it comes out clean.
- Cool completely for several hours or overnight. Unmold the flan by inserting a spatula along the sides of the baking dish, invert on serving plate and enjoy!

What size bowl or dish are you putting flan in for thevIP?
Do you grease the bowl before hand?
No, I just do add the melted sugar to the bowl. Hope that helps! 🙂

What pan do you use to put in the pot?
A medium size Pyrex (oven-safe) bowl.
Medium size Pyrex bowl doesn’t help much. Do you know how many cups/ounces this bowl holds that you used? Or would a 7″ metal spring form pan work? Would the time be the same with a metal pan?
I would not use a spring form pan, it would leak, Inused a 7 inch bunds pan
I agree. A size would be nice — how many inches does it measure across? Some Pyrex bowls even have the volume etched on the bottom.
Also, just to clarify, is the sugar in step 1 cooked dry? So, only sugar goes in the saucepan?
just figure it out, geez, find what fits in YOUR instant pot and done. EYEROLL.
I forgot to put foil over the spring form pan I used for the flan, so it was kind of runny when it finished. I put foil on it and set it for another 3 minutes. Hers hoping I didn’t ruin it.

Mine came out pretty liquidy after 5 minutes. another 3 minutes under pressure did not help either. It set after one overnight in the fridge. What am I doing wrong

Have you tried makingin single servering size dishes? Would the time change?
I haven’t tried, but I guess the time will stay the same.
I can never get all of the caramel to come off the fish after I take it out. I get enough to flavor the flan, but I still have a layer of caramel stuck to the cooking dish. Is that normal?
I always have plenty to pour on top of the flan. However, it is true that not all the caramel comes off the dish. I would recommend that you try the Bain Marie method to melt some of the caramel from the dish. 🙂
I got a flan mold from Amazon and it works beautifully in my 6 qt IP. It has a clamp-on top so condensation can’t drip in and dilute the flan. I’m planning to try it for cheesecake the next time I make one.

I’ve used the pan you’re referencing for cheesecake. I line it with non-stick foil so I can lift the cheesecake out, and it works great.

Una, any pressure cooker will do. Even a conventional, hope that helps.
Will it work in Corning Ware?….followed the same method but it came out as I poured in the first place….kept it inside for another 6 mins….
Yes, they should all work the same way. However, yours might be too deep, try using a shallower bowl or a flan bowl. Hope that helps.
I am using a pyrex bowl that fits within the 8 1/2 inch diameter 6qt InstantPot pan. The bowl is 7 1/4 inch in diameter and is 1/2 filled with this recipe. It always takes about 20 minutes of high pressure time for this recipe to become firm. I’ve made this 4 times now. I love the recipe but the time is very misleading. Since I have made flan the traditional way for many years, I’m familiar with how it should turn out.

I am sorry the flan is not coming up the way you are used to. I have made this recipe many, many, many times and it always comes out. Have you tried using a smaller pyrex bowl?

We are in Miami, so pretty much a few feet above sea level. 🙂 As far as dulce de leche for a flan, I have never tried that, but will try making one soon. Let me know how yours turns out. 🙂

I can’t believe I actually did this and it came out delicious! All without the oven! I used coconut milk. After the first round of time it was still liquid. I put it back in for 7 additional minutes and 13 minutes keep warm setting and removed it. It was solid. I just have to figure out what amount of time works for my pot. Next time I’ll cook 2 minutes less to get it more silken.
I made this today. 5 mins manual then NPR 10 minutes.
The inside of the flan was jiggling and NOT cooked or set. The outer part was cooked. Inside came out wet with the toothpick test.
So when I cooked the second batch I let it sit for longer. I let it cook for manual 5 mins and NPR for 40 mins. This second flan was completely set.
I feel it needed more time than the recipe calls for?
Any idea why mine didn’t set. I used pyrex bowl and covered with aluminum foil just like the video stated.
It could be your altitude. Where are you located?
Can I use a flan mold instead of a bowl? The original way to make the perfect flan is in a flan mold so I was wondering if it is possible to use that instead of a bowl?
