Old El Paso offers a variety of frozen entrees and shelf-stable products that are sure to be a hit with your friends and family! Now that Publix is having this amazing sale, I made sure I grabbed a couple of extra Old El Paso products to keep handy for Mexican night. One of my favorite things about Old El Paso products is that you can find easy recipes ideas right there on the box as well as the Old El Paso Website. This weekend I was browsing the Old Paso Website and found an Easy Chicken Enchilada Boats (see below) that I will be trying this weekend for the kiddos. What do you think? Easy Chicken Enchilada Boats

Easy Chicken Enchilada Boats

ingredients:

  • 1 lb boneless skinless chicken breasts
  • 1 can (10 oz) Old El Paso® enchilada sauce
  • 1 can (4.5 oz) Old El Paso® chopped green chiles
  • 8 Old El Paso® Stand ‘N Stuff® soft flour tortillas
  • 1 cup shredded Monterey Jack cheese (4 oz)
  • Make it FRESH toppings, if desired (see below)

preparation:

Step 1 Heat oven to 350°F.

Step 2 In 8-inch skillet, cook chicken over medium-high heat. Cut into small pieces; in medium bowl, stir together chicken, enchilada sauce and chiles. Spoon into tortillas; top with cheese. Place on ungreased cookie sheet.

Step 3 Bake 8 to 10 minutes or until bubbly. Make it FRESH with desired toppings.
