This easy and ready in minutes Chicken and Avocado Tropichop Taco Bowl recipe combines rice, diced tomatoes, chicken breast, and seasoned black beans for a complete and delicious meal on a convenient tortilla bowl.
During the summer months, not only is our routine is easier but preparing meals is quite easy as well. I love that we are not busy running around getting the kids ready for school, assisting with homework assignments, driving them to and from home to school, and to their extra-curricular activities, it is just about enjoying the time off. But, since we cannot stop time and spent the entire year on vacation mode, we have to find ways of getting dinner and lunches ready in a flash. If you visit our home any time of the week, you will find rice, beans, some kind of protein and veggies being cooked. To make our lunches a little less hectic, I always prepare a little extra of whatever we are making to remake and enjoy a simple and satisfying lunch. One such meal is our easy and ready in a flash Chicken and Avocado Tropichop Taco Bowl lunch. Oh, this stuff is delicious!

This easy lunch can be put together in less than 10 minutes, yes I am not kidding you. All you need is some rice, chicken, beans, tomatoes, avocados or any other favorite item you might have laying around from last night’s dinner. One last thing you need to make this quick meal a reality is Old El Paso Soft Tortilla Taco Boats. For a quick reference you will need the following ingredients to make our Chicken and Avocado Tropichop Taco Bowl:
