The Holiday season is such a special time for our family because it is the only time of the year where the entire family slows down and enjoys each other’s company. Whether is our turn to host our extended family or we get to go visit their homes, we always make the point to make delicious dishes everyone enjoys. Our holiday spread includes turkey, ham, pernil de cerdo (pork shoulder), a variety of side dishes and our favorite appetizers.
Among our favorite appetizers are devil’s eggs, many different cheesy spreads & dips and yum, chorizo nachos. What I personally love about Nachos is that they are such a versatile dish. You can easily prepare a nacho dish with just about anything you might like on them and the best part is that I can pick up everything I need at my local Publix store when I am doing my weekly grocery shopping. Oh, and if that wasn’t enough, they are sure to please a hungry party, no matter the size and how many teenagers you are hosting! 🙂 I invite you to prepare our easy chorizo nachos recipe for your next Holiday party or hey, any family gathering for that matter.
What do you need to prepare our easy chorizo nacho recipe?
You will need is a couple of tomatoes, one small yellow onion (diced), a couple of jalapeño chili peppers, one fifteen ounce can of refried beans, one sixteen ounce bag of pre-shredded lettuce, one cup of Real California Milk crema Mexicana, three cups of Real California Milk queso fresco, and seven cups or one sixteen once bag of nacho tortilla chips, and finally two eight ounces or 1 pound of pork chorizo (casing removed).
How to prepare our easy chorizo nacho recipe?
First, heat a large skillet over medium-high heat and cook the chorizo until crumbly and cooked through and set aside. Next, coat the bottom of a medium-size skillet with olive oil or butter (about 1 teaspoon per onion). Heat the skillet medium-high heat until the oil is shimmering. Next, add the diced onion to the skillet and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let them cook, stirring occasionally until they are transparent and golden. Set the onions aside. Next, place the refried beans in a microwaveable dish and heat in 1-2 minutes intervals until beans are heated. Now, it is time to start assembling your nachos.
To assemble your nachos all you have to do is begin by placing nacho tortilla chips on the plate of your choice. Followed by loading the nacho tortilla chips with the refried beans.
Continue to assemble your nachos by scattering the cooked chorizo on top of the warmed refried beans.
Next, drizzle as much or as little of Real California Milk crema Mexicana on top of the refried beans and chorizo. We add a lot of crema Mexicana to our nachos because we love how tasty it makes the nachos.
Next, using your fingers, crumble some Real California Milk queso fresco on top.
Next, top your nachos with shredded lettuce.
Continue, by topping your nachos with some diced tomatoes.
Next, load your nachos with as many sliced jalapeño chili peppers.
Finally, top your nachos with the caramelized onions and enjoy!
