Empanadas are such a big part of the Hispanic table. The best part about Empanadas is that they are not only super simple to prepare, but they can be enjoyed as an irresistible savory or sweet treat for breakfast, lunch, dinner, snack or even as appetizers. Every single time a make a batch of my super easy strawberry empanadas recipe, they seriously disappear as soon as I set them down on the plate. So, last week while I getting our weekly groceries, I picked up a pack of Fresh From Florida strawberries and I hid them for my strawberry thieves aka my kids! They are true strawberry monsters. 🙂
Easy Strawberry Empanadas Recipe
Preparing my easy strawberry empanada recipe is quite simple. For the filling, all you need is an 8-ounce cream cheese brick, at room temperature. 1/2-cup of sugar, 1-tablespoon of vanilla, 1-1/2 cups of Fresh From Florida strawberries, diced. For the egg wash, you will need one egg. Finally, you can make your own empanada dough or buy 1 pk. 10-count of already-made empanada dough, which can be found at your local supermarket in the Hispanic frozen food aisle.
Now, let’s put these yummy empanadas together…
First, in a medium-bowl, mix together the cream cheese, sugar, and vanilla. Next, fold in diced strawberries onto the filling mixture. Following that, spoon one tablespoon of filling onto the center of each empanada disc. Next, using your finger, lightly brush the edge of the empanada with egg wash and fold the dough over.
Now, using a fork seal the edges, transfer to baking sheet, brush the top of the empanada with egg wash, and pinch the empanada dough with the points of a fork. Empanadas are typically fried, but I honestly rather baked them in my conventional oven. So, the last step is to bake the raw empanadas for 15 minutes in a 400 Fahrenheit degree oven and enjoy them. Note. I would advise you to wait at least 20 mins to enjoy your empanadas because the filling gets rather hot.

Thankfully, Florida farmers make it super easy for everyone to eat fresh produce all year-round.
