Having the three kids at home all summer long means that I can get them to help with food preparation, therefore, preparing easy recipes with fresh ingredients is a must. One of our favorite recipes during this season is our beyond easy to prepare and oh, so good easy turkey bacon, tomatoes, and avocado salad recipe. This salad is not only good, it is also very portable, perfect for a summer picnic by the beach or the park. EASY TURKEY BACON, TOMATOES, AND AVOCADO SALAD RECIPE
INGREDIENTS:
- 3 teaspoons olive oil
- 3 tablespoons fresh lime juice
- 1 pack of turkey bacon, diced or crumbled
- 2 Avocados From Mexico
- 1 medium tomato (1-cup of Cherry, 2-Roma or 1-Salad tomatoes)
- 1/4 cup of white queso fresco
- Pepper and salt to taste
- For serving: Flour or corn tortillas (optional)
DIRECTIONS:
- Prepare turkey bacon according to instructions on the package and dice crispy bacon into smaller pieces.
- Dice the avocado into ½-inch and set aside.
- Dice tomatoes with a knife, if using cherry tomatoes cut in half, all other tomatoes, cut into ½-inch cubes.
- For the dressing: In a small bowl, combine olive oil, lemon, salt, and pepper and whisk together.
- Serving: If you are preparing this salad for later, arrange the turkey bacon, avocado, tomatoes, and crumbled cheese on a platter and dressing on the side. You can easily prepare the salad in a plastic to-go container and take it along.
- If you are serving this salad immediately, put the bacon, avocado, and tomatoes in a bowl, drizzle dressing and stir gently to combine.
