Summer break is officially over and it is now time to get back into our back-to-school routine. Yes, this means, no more staying up late, dropping off and picking up kids to & from school, afternoons filled with homework assignments, plus after-school activities and if all that wasn’t enough, preparing meals.
I have to be honest here, during summer break, we typically don’t do any kind of meal planning. As a matter of fact, we usually decide what we want to eat for breakfast, lunch, dinner, and snacks in a snap. Hey, but now that definitely changes, it is time to shape up! 🙂 Thankfully, during this time, I have a few go-to products, like Tyson® Crispy Chicken Strips; which by the way, have a new perfectly seasoned recipe and are now even crispier and available at your local Walmart stores. Easy Tyson® Crispy Chicken Strips Tacos Recipe
One of our favorite go-to back-to-school recipes is our easy Tyson® Crispy Chicken Strips tacos. What I love most about this recipe is that we can easily enjoy it for a quick lunch, yummy snack or an easy dinner option and trust me, I keep all the necessary ingredients on hand all the time.
For this super easy Tyson® Crispy Chicken Strips Tacos recipe all you need is two Haas avocados (peeled and diced), two corn on the cob (cooked on the grill or by boiling on the cooktop until tender and removing the corn off the cob), 6 to 8 Tyson® Crispy Chicken Strips (cooked according to the baking instructions on back), 8 to 10 corn tortillas (small), one cup queso fresco (crumbled), 3 cups of fresh pico de gallo (for topping), and salt to taste.
First, begin by baking 6 to 8 Tyson® Crispy Chicken Strips, cooked according to the baking instructions on back. Second, heat the tortillas and cut the chicken strips into bite-size pieces. Assemble your easy Tyson® Crispy Chicken Strips tacos as follow.
On each tortilla, place bite-size pieces of Tyson® Crispy Chicken Strips. Next, add fresh corn, and fresh diced avocado pieces.
Continue assembling your tacos by topping off your chicken, corn, and avocados with some fresh pico de gallo and crumbled queso fresco. You can top your tacos with some chopped cilantro or just garnish for easy removal. 🙂
