If you have been reading this blog for some time, you know that I love making easy recipes. However, the one thing you don’t know is that those easy recipes, can’t never miss a warm side of white rice. After all, we are a Latino family and we love our rice. Besides loving rice so much, I also love that rice is so versatile, you can accompany it with your favorite meat, poultry or fish entree or enjoy it all by itself or with a side of steamed veggies or with veggies in it. Trust me, anyway you serve it, it is simple so good! One of my favorite rice recipes is my Easy Vegetable Rice Medley, this recipe is so simple to prepare, yet it is so good because of its unique flavor. Keep reading to find how I infuse my Easy Vegetable Rice Medley with a ton of flavor.
Easy Vegetable Rice Medley Recipe
To prepare this recipe all you need is 2 tbsp of butter, 1 cup of rice, 2 Knorr beef bouillon, 2 cups of water, 2 cups of frozen mixed vegetables and salt and pepper to taste. Continue preparing this recipe by following the instructions below.
Easy Vegetable Rice Medley Recipe
Ingredients
- 2 tbsp of butter
- 1 cup of rice
- 2 Knorr beef bouillon
- 2 cups of warm water
- 2 cups of frozen mixed vegetables
- salt and pepper to taste
Instructions
- In a large skillet, melt 2 tbsp of butter.
- Add 2 cups frozen mixed vegetables.
- Dissolve one Knorr beef bouillon in 1/4 cup of water and add to frozen vegetables.
- Once vegetables are tender, add one cup of rice and stir together.
- Simmer for 2 or 3 minutes in low heat.
- Dissolve the other Knorr beef bouillon in 3/4 cup water. Add this and the other cup to the rice and veggies.
- Stir together, cover and cook on low to medium heat for 15 to 20 minutes or until rice is done.
- Remove from heat.
- Let stand 5 minutes before serving.
As I mentioned above, my Easy Vegetable Rice Medley is infused with a ton of flavor because I use Knorr bouillon cubes (beef or tomato with chicken flavors), depending on what I am pairing my rice dish with. My favorite way to enjoy my Easy Vegetable Rice Medley is by grilling some chicken and add a bunch of freshly diced tomatoes and a splash of lime. Yummy!
