My family and I love anything pasta, as a matter of fact, on a weekly basis, we prepare at least one pasta dish. Since weeknights are pretty hectic and because I am always looking for easy ways to prepare the recipes we all love, we came up with this easy to prepare cheesy pasta with beef and Heirloom tomatoes dish. The best part about this recipe is that you can prepare it all in one pot. I am talking about your Instant Pot pressure cooker. That’s right, I am saying that all you need to get this recipe done is your pressure cooker and a few ingredients. Not only is this recipe easy to prepare, but this meal is packed with delicious tomatoes, onions, and beef.
Instant Pot Cheesy Pasta with Beef and Heirloom Tomatoes recipe
Here we go, all you need to prepare this Instant Pot Cheesy Pasta with Beef and Heirloom Tomatoes is 8 ounces dry spaghetti, 1 pound ground beef, 3 cups heirloom cherry tomatoes, 1 small white onion, 10 sprigs parsley, 4 cups vegetable broth, 1 cup Mozzarella, 1/2 teaspoon pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and Red pepper (optional & to taste).
To prepare this easy and delicious recipe all you have to do is:
- First, set your Instant Pot to saute mode. Once the front panel on the Instant Pot reads “hot”, brown the ground beef together with onion.
- Once the ground beef has been browned, add in the cherry tomatoes, parsley, dry spaghetti, and the vegetable broth to the beef.
- Now, add the pasta to the Instant Pot inner pot and press the pasta down so that the pasta is under the liquid.
Note: If necessary, add a little extra liquid (water) to cover the pasta. You can also drain excess liquid once the pasta has finished cooking. - Now, place the Instant Pot lid on and turn pressure valve to the “seal” position. Set on manual high pressure and cook for 6 minutes.
- Once the Instant Pot is done cooking, quick release the pressure. Here you can drain the excesses liquid if desired. Add in the remaining ingredients and stir in the cheese. Serve and enjoy!
