Instant Pot Lime Cilantro Rice

Instant Pot Lime Cilantro Rice Recipe
Yield: 2 -3 servings

Instant Pot Lime Cilantro Rice Recipe

Prep Time: 5 minutes
Cook Time: 12 minutes
Total Time: 17 minutes

Ingredients

  • 1 cup of white rice
  • 1 small lime
  • 1 zest of one lime
  • 1/4 cup of chopped cilantro, fresh
  • Salt to taste
  • 1 1/2 cups of water

Instructions

  1. Add one cup of rinsed rise to the inner pot of your Instant Pot Pressure Cooker.
  2. Add water to the rice and place the lid on, turn the valve to "sealing", then click on the "Rice" preset. This will cook the rice for 12 mins on low pressure.
  3. Once the Instant Pot is done, quick release the pressure by turning the steam release valve to "venting" and finally, carefully remove the lid.
  4. Using a fork, fluff your rice and add the lime juice, zest, cilantro, and salt.
  5. Finally, stir the rice and serve warm.

    Very good–simple but delicious! It pairs very well with salsa verde chicken! I usually do 4 min Manual high pressure to make white rice to speed things up šŸ™‚

    Just made this and it came out really good. We did a skirt steak with it and it was fulfillig. Simple recipe that is very easy to follow. Will definitely do again.
