So, let’s continue with the recipe and the ingredients. For this easy, flavorful, and delicious Instant Pot meatball vegetable soup recipe the ingredients are as followed:
- 1 tablespoon butter
- 2 tablespoons chopped garlic
- 1 tablespoon Worcestershire sauce
- 3-4 cups beef broth
- 1 small can of tomato paste
- 1 large can of diced tomatoes
- 1 large can of tomato sauce
- 1 small can of sliced jalapenos
- 1 tablespoon Italian seasoning
- 1 tablespoon onion powder
- 1 bag of frozen meatballs
- 1 small bag of petite potatoes, sliced in quarters
- 1 bag of frozen mixed vegetables
- Shredded cheddar cheese if desired
- Salt and pepper to taste
You see the ingredients are simple and I am sure you have most of them in your freezer and pantry. Now, to prepare this deliciously loaded soup with meatballs, jalapeños, tomatoes, potatoes and more, all you have to do is:
- First, set your Instant Pot to sauté/browning by clicking on the “saute” pre-set. Then, add butter and allow to sizzle.
- Next, add garlic and cook 1 minute, stirring occasionally.
- Now, add beef broth and Worcestershire sauce.
- Then, add tomato paste, tomato sauce, and diced tomatoes.
- Next, add jalapenos, onion powder, and Italian seasoning.
- Finally, add meatballs, potatoes, frozen vegetables, and stir.
- Now, lock the Instant Pot lid and make sure it is not on venting. Set to high pressure and cook for 20 minutes. Allow pressure to naturally release and then release any remaining pressure before opening the lid.
- To serve, add shredded cheese (if desired) and enjoy.
