Although Spring is not officially here, today we woke up to a beautiful Spring morning. Therefore, we sprung forward and cleared out & organized a few things around the house and spent some quality time with my mother, sister and my nephew. Later in the afternoon the kiddos decided hang out in the swimming pool. To celebrate the beginning of Spring an to get in the mood for Summer, I decide to break out the new Betty Crocker Watermelon Cake & Frosting, which is available only at Target!
Although the new Betty Crocker Watermelon Cake is for making cupcakes, I went ahead and made a cake following the box directions with one exception, I used butter instead of oil. The Betty Crocker Watermelon Cake is bright watermelon pink with dark spots to simulate watermelon seeds, see the image below. Betty Crocker cake mixes are fun and always available for the different seasons. Which is your favorite Betty Cocker cake mix? Ours is vanilla with cheesecake frosting, yum!
As you can see from the images, I made a basic two-layer square cake with Watermelon frosting in between the layers. For the outside of the cake, I used my frosting pipping bag & cake spatula to frost the cake. To finish the cake, I made a few spikes for the corners and the center. The boys loved the watermelon cake, they said it was one of the best cakes I have ever made for them. 🙂 The new Betty Crocker Watermelon Cake & Frosting are on the sweet side, next time I make the cake mix I will use my favorite cheesecake frosting.
