Now that Christmas is just around the corner, now is the perfect time to get ready for all the family gatherings! Since I am in the mood to experiment with new delicious recipes that I can incorporate during the Holiday festivities. I decided to dive into a new recipe from our neighbors to the South. I am talking about Mexican Buñuelos, which are crispy tortilla fritters or elephant ears and they are heavenly delicious. This recipe takes a bit of work, but like I said before, the results are beyond delicious.
Mexican Buñuelos
To make a batch of these delicious Mexican Buñelos, you will need: 2 cups all-purpose flour, 1 teaspoon baking powder, 1 tablespoon white sugar, 1/2 teaspoon salt, 1 teaspoon vanilla extract, 2 eggs at room temperature, 1 teaspoon vegetable oil or melted butter at room temperature. To sprinkle the buñelos, you will need 1 teaspoon ground cinnamon, and 1 teaspoon white sugar.
To make the buñuelos, you need to do the following: First, in a large bowl combine: 2 cups flour, 1 teaspoon baking powder, 1 teaspoon sugar and 1/2 teaspoon salt. Make sure to combine all the ingredients well. Second, in the same bowl, form a space in the middle of the flour mixture and add the following: 2 eggs, 1 teaspoon sugar, oil, 1 teaspoon vanilla extract and mix until the ingredients with your hands until everything is combined and the dough is thick and elastic. If the dough is not elastic and firm, add 1/4 cup of warm water at a time.
Next, cover the bowl with a damp towel for about 20-30 minutes. After 30 minutes, begin shaping the dough into small balls, about 5 inches in diameter. Turn dough balls out onto a floured surface and with a rolling pin, roll the dough balls into small a circle.
Next, heat about 1 cup of oil in a skillet to 350 degrees. Fry each circle for about 15 seconds on each side or until golden. Turn only once and drain excess oil on paper towels. In a small bowl, mix 1 teaspoon sugar and 1 teaspoon cinnamon. Sprinkle each buñelo with the mixture of sugar and cinnamon. Serve your buñelos with some whipped cream.
If you want to make an easier version of these Mexican Buñelos, all you need to do is fry thin tortillas and sprinkle them with some of the sugar and cinnamon mixtures.
