This time of the year, I tend to get very nostalgic and reminisce about my dearest grandmother and all the wonderful years we spent together making memories at her small little house, in her natal hometown in Nicaragua. I remember how she used to make us kids delicious meals and scrumptious sweet treats while she told stories from when her seven kids (which included my mom) were young. I truly cherish those years and all the family traditions she passed down to me, my sister and all of our cousins. When my family and I, moved to the United States, we brought with us many of those traditions our family matriarch gifted us with, but we also adopted new traditions.
Have you ever heard of Assunta Cantisano? Assunta, like many of us, moved to the United States from Italy and brought with her family traditions and recipes. Assunta eventually, put together a pasta sauce recipe and began selling it from her front porch. If you don’t know what I am talking about! Assunta is the person who created Ragu, yup that’s amazing right? Like Assunta, my inspiration comes from my family and I have three little people who love to eat pasta and since I love to make easy recipes that can be done in a jiffy, today I want to share with you our easy Rigatoni Primavera with chicken and Ragu pasta recipe.
Rigatoni Primavera with Chicken Recipe
So, what do you need to create this recipe? All you need is 3 Tbsp. olive oil, 1 package of cooked chicken strips, 3 cups peppers and mushrooms, 1 jar (1 lb. 8 oz.) Ragu® Chunky Sauce, 1 Tbsp. fresh basil leaves or 1 tsp. dried basil leaves, 12 ounces Rigatoni Pasta, and ½ c. grated Parmesan. Once you gather all your ingredients, you need to do the following. First, heat Sauce in a medium saucepan until heated through; set aside and keep warm. Second, heat olive oil in a large skillet over medium heat and cook together chicken, vegetables and basil. Stir occasionally for about 6 minutes or until chicken is warm and vegetables are tender. Thirdly, cook Rigatoni pasta according to box directions. Finally, toss hot drained Rigatoni pasta, chicken, veggies, and sauce together. Serve pasta, sprinkle grated Parmesan cheese over it, serve and enjoy!
