Did you know that the average household consumes over 15 pounds of Turkey per year and about 675 million pounds of turkey on Thanksgiving Day? My household is definitely a statistic, we love turkey and eat it at least on a weekly basis. This is why I am always looking for new ways to prepare it in easy and delicious ways. One way is to add a bit of our Latino seasoning into what we already like to eat. All Latin American countries have their own version of empanadas o pasteles. Empanadas are extremely versatile and can be prepared by adding a variety of fillings, such as meat, chicken, turkey, cheeses, and vegetables. Today, I want to share with you one of my favorite ways to enjoy turkey for lunch, dinner or as a snack.
Salsa Verde Turkey Empanadas
To make these Salsa Verde Turkey Empanadas recipe, all you need is 10 pre-made empanada dough rounds, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1 teaspoon dried Mexican oregano or regular oregano, crushed, 2 cups cubed cooked turkey, 1 cup of frozen mixed vegetables, 1/2 cup salsa verde Herdez, 1 egg for brushing empanadas tops and Extra Salsa verde for dipping.
To make these Salsa Verde Turkey Empanadas, first you need to preheat your oven to 350 degrees F. In the meantime, in a medium bowl combine cubed turkey, 1/2 cup salsa verde, oregano, onion powder, garlic powder and mixed vegetables. Then, spoon in about 1 or 2 ounces of turkey mixture into the center of the dough circle. While carefully holding onto edge of the empanada dough, fold over the dough into a turnover shape. Seal dough edges by pressing with your fingers and/or the tines of a fork. Repeat with the remaining dough circles and turkey mixture to make 10 empanadas total. Next, beat egg and brush the tops of the empanadas. Place empanadas in a greased baking sheet and bake for 20-25 minutes or until golden brown. Finally, cool down the empanadas completely and serve them with additional salsa verde for dipping.
