Seriously, I love living in sunny South Florida! And no, that sentiment is not only because of the amazing beaches and the sunny weather. It is because Florida is more than just a sunny state period. For instance, here in Florida local farmers make it easy for everyone to eat fresh produce all year-round, which is why we choose to buy locally grown produce. Ever since I was young, my mother made a point of always having fresh fruits and veggies at home and now, I am doing the same thing with my kiddos. Today it was grocery shopping day and while I was at my local Publix store, I noticed that Bell Peppers, Blueberries, Watermelon and my personal favorite, Sweet Corn are now in-season. Of course, this meant I had to pick up a bunch of corn and make my fresh sweet corn, tomatoes & feta cheese salad to accompany tonight’s supper. Yummy!
Fresh Sweet Corn, Tomatoes & Feta Cheese Salad
So, what do you need to create our fresh sweet corn, tomatoes & feta cheese salad? Well, it is simple as the name implies. All you need is four (4) ears of Fresh from Florida sweet corn. Make sure husk and silk are removed from the corn. You will also need one (1) pint of sweet cherry tomatoes, which you will need to half. Two (2) green onions, sliced; eight (8) ounces of feta cheese; three (3) tablespoons of apple cider vinegar; (3) tablespoons of extra virgin olive oil and salt & pepper to taste.
Now to prepare this fresh sweet corn, tomatoes & feta cheese salad, you first need to get your sweet corn cooked. Don’t worry, fresh sweet corn cooks in under three minutes. Start by bringing water to a boil in a large pot. Once your water boils, add the sweet corn and boil the corn for 2-3 minutes or until fork tender. Remove corn and place them on a plate to cool them down. When the corn is cool enough to handle, cut the kernels off the cob, cutting close to the cob, and place the corn in a large bowl. Next, half the tomatoes and sliced the green onions.
Now, add the halved tomatoes, sliced onions, and feta cheese to the corn. Slightly, toss the ingredients together to combine. Next, in a small bowl, whisk the olive oil and apple cider vinegar together.
Now, pour the olive oil and apple cider vinegar dressing to the salad. Also, add salt and pepper to taste and gently toss. Taste and adjust the seasonings with salt and pepper.
This fresh sweet corn, tomatoes & feta cheese salad can be served at room temperature or refrigerate until ready to serve, which is actually my favorite way to serve this salad. Seriously, this is one of my favorite salads and often make it for whenever we get together for a family BBQ or as a companion for grill chicken or yummy steak.
