This week was full of excitement, from Santa’s visit to spending quality time with family and friends. This year we kept our Christmas dinner menu simple, instead of having a fancy menu we opted for a more relax & cozy menu. We incorporated some traditional dishes, which the kids were very happy with, among them: we had our version of Tropical Island Chex Party Mix.
This is the first time we tried making any kind of Chex party mix, true! Thankfully Chex mix is super easy to make and extremely tasty. On Wednesday morning, we gather the kiddos in the kitchen and follow the recipe below, we did excluded some of the ingredients due to some allergy factors.
Tropical Island Chex Mix
Ingredients:
- 8 cups Rice Chex® cereal
- 1 cup shredded coconut, if desired
- 1 cup dried banana chips
- 1 package (7 oz) dried tropical fruit mix (we omitted this ingredient)
- 1 jar (3 oz) macadamia nuts (we omitted this ingredient)
- 3 tablespoons butter or margarine
- 1/4 cup packed brown sugar
- 1/4 cup frozen (thawed) pineapple or orange juice concentrate
Method:
- In microwavable measuring cup, microwave butter uncovered on High about 30 seconds or until melted. Stir in brown sugar and pineapple juice concentrate. Microwave uncovered on High about 30 seconds or until hot; stir. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 6 to 8 minutes, stirring every 2 minutes, until mixture just begins to brown.Spread on waxed paper or foil to cool. Store in airtight container.
- Oven Directions: Heat oven to 300°F. In ungreased large roasting pan, mix cereal, coconut, banana chips, tropical fruit mix and nuts. In 1-quart saucepan, heat butter, brown sugar and pineapple juice concentrate over medium heat until hot. Pour over cereal mixture, stirring until evenly coated. Bake uncovered 30 minutes, stirring after 15 minutes. Spread on waxed paper or foil to cool, about 15 minutes. Store in airtight container.
- In large microwavable bowl, mix cereal, coconut, banana chips, tropical fruit mix and nuts.
As I said this recipe is super easy to make, from start to finished it only took 15 minutes. We enjoyed some Chex mix for desert & for snack, it is simply delicious! The best part is that because it is so simple, we can enjoy quality time with the kids while making this simple snack!
