Around this time of the year, all the smells and holiday flavors remind me of when I was a child growing up in Nicaragua. One thing I long for every Christmas is to eat Nicaraguan stuffing. Nicaraguan stuffing is traditionally made with pork, unfortunately I can no longer eat pork. Well this year I decided that I need to be able to enjoy those flavors again. I did some research and decided to substitute pork for chicken and thankfully the flavors I have enjoyed since my childhood are back in my life!
Ingredients:
2 Chicken Breasts
4 large baking Potatoes
2 table spoons of Capers
2 cups of Olives
2 large Carrots
1 medium onion
2 cloves of garlic
1 stick of butter
1 table spoon Mustard
1 table spoon Worcestershire sauce
2 or 3 cups of Ketchup
1 cup of Raisin
Olive oil
1- 4 oz. can of sweet peas
Method:
Cook chicken in water with onion and garlic, like a chicken soup. When the chicken reaches 160 degree turn off the heat and let it cool down completely, save about 2 cups of the chicken stock. After the chicken is cool, cut it into square. Cut the potatoes and carrots into squares and separate onto a separate container. In a large pot melt 1 stick of butter and equal parts of olive oil add carrots and potatoes. Cut the onion and garlic into small pieces and add to the to the cooking pot. Check the potatoes for tenderness, if need be add some of the chicken stock. Stir in the chicken to the vegetables stew. Let the liquids re-consume into the chicken and the vegetables. Add ketchup, mustard, Worcestershire sauce, capers, olives, sweet peas and raisins. Let all the flavors combined and wait until all the vegetables are done, if need be you can add more ketchup.
